The Lead Cook will plan, direct and supervise Shelter food service, which includes providing three nutritious, economical meals a day and snacks twice a day for up to 600 residents and staff all while following Department of Health regulations. Responsibilities include all aspects of food preparation and general kitchen cleanup.
All services shall be provided in accordance with established standards, principles, and ethics of the profession, applicable professional specialty organizations, and the high-quality standard for which CHS is recognized.
Duties and Responsibilities:
Perform and/or provide direction and support for the following services:
The Lead Cook is responsible for food preparation for the youth at the shelter during the assigned shift. The Lead Cook will maintain a flexible, organized, and efficient work schedule, which could include evenings, weekends, or holidays.
Assistance in menu preparation to ensure compliance with specified standards and recommendations by the American Dietetic Association, funding source, State licensing, National School Lunch Programs (NSLP) and CHSi guidelines.
Maintain a clean, safe and hazard-free dining room and kitchen facility at all times.
Ensure the kitchen is in compliance with health department standards.
Assist in maintaining inventory for food purchases and equipment including monitoring monthly waste control.
Wash, peel, and cut various foods, such as fruits and vegetables, to prepare for cooking or serving.
Ensure food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, and roasters.
Enter menus in a timely manner into NSLP data base.
Must have at least 2+ years’ experience working as a cook (preparation, serving, transport)
Complete and maintain food handling certification.
Minimum age of 21 years or older
High school diploma or its equivalent
Bilingual in Spanish & English (Read, Write, Speak)
Clean criminal background check
Assists in the performance of custodial duties as needed.
Performs other duties of a similar nature or level.
Assists with transporting lunches as needed.
Performs duties in a safe manner. Follows the corporate safety policy.
Participates in and supports safety meetings, training, and goals.
Ensures safe operating conditions within an area of responsibility.
Maintains a clean and orderly work area.
Ability to ascend/descend stairs
Ability to lift up to 30 lbs.
Able to communicate verbally and listen for constant surveillance of children’s activities
Ability to stand; particularly for sustained periods of time
Able to receive and understand detailed information through oral communication
Able to withstand changing environmental conditions with weather (rain, lightning, and winds)
Able to withstand and manipulate through construction areas, sports fields, etc.
